Garlic Seasoned Rice - Brazilian Style!

Now that I have your attention, lets talk about the easiest, tastiest rice you'll surely be addicted to after one meal! We make a big batch of this rice meant to last the week but it never does. This recipe is a typical Brazilian rice recipe that was taught to me by my Aunt (Obrigada Tia Ci!) when she stayed with us after our Son was born.

The most simple and delicious rice ever!

Rice is a staple in our house, and I would assume most homes across the globe! Growing up we never ate plain rice. Every night at dinner we had our arroz temperado (rice seasoned.) I never realized this was not typical until I was an adult when I would make food for friends and they would call the rice garlic rice, instead of just rice. This recipe can me modified endlessly! I love to blend herbs with chicken stock to make herbal rice (try it with parsley, basil, and Serrano pepper.) let me know if you try it and how you like it!


Brazilian Garlic Rice


Ingredients

Makes 4 servings

  • 1 T Unsalted butter, oil or ghee

  • 1 C Uncooked Rice

  • 2 C Water or Stock

  • 4-5 ea Cloves Garlic (Diced)

  • ½ T 'alho & sal' (garlic salt - or ¼ T Kosher Salt)

Directions

  1. Rinse Rice in a fine strainer and leave to drip dry.

  2. Add Ghee to a pre heated pot and add uncooked rice to begin toast. Do not add garlic yet! it will burn before your rice toasts.

  3. When you see your rice beginning to look and smell toasted, add in your chopped garlic. stir and allow to become aromatic (about 2 minutes.)

  4. Add in Garlic salt (or salt and garlic paste) and stir to coat.

  5. Add 2 cups of stock (or water.) Stir and taste - if the liquid does not taste salty like the ocean, add more Salt!

  6. Bring pot to boil, then lower to lowest setting and cover for 20 minutes. Set a timer!

  7. To check for doneness, make a window in the center of the rice to make sure liquid is absorbed.

Once the liquid is absorbed turn off the heat. Leave covered until service. Do not mix for it to stay fluffy!
